I’ve been vegan now for just over three years, and in that time I have discovered a love for cooking, and eating, that had always been lacking. I grew up the daughter of a butcher and as you can imagine, every meal consisted of some kind of meat.
Each meal was a battle for me – don’t get me wrong I’m not talking eating disorder – I just didn’t like meat. I would cut it up, push it around and hide bits of it under the mashed potato. It never fooled anyone. Dad would get annoyed at my wastefulness and I suppose mum thought she’d wasted her time cooking.
I think the reason it took me so long (I was 47) to switch to a vegan diet, was because I imagined it would be dreadfully boring and bland. I couldn’t have been more wrong. In fact I’d go so far as to say that vegan food – prepared creatively – is much tastier and way more interesting than my previous diet of meat and three veg. So here on my blog I plan to share some of my favourite vegan recipes and blogs with you.
I believe that we are mind, body and spirit, and that one cannot be separated from the other when it comes to our overall wellness. So here for your eating pleasure I am proud to present: Vegan Spanakopita!
I found this recipe several months ago and it has become a family favourite. You’ll be happy to hear that it doesn’t require any exotic or hard to come by ingredients. It’s made from homemade almond feta and fresh baby spinach and it is the cat’s whiskers! So to speak.
